NEW HAMPSHIRE MAPLE SUGARING
Spring, Statewide, New HampshireFor the many months leading up to Spring, New Hampshire’s maple producers prepare for the year’s crops, hanging new tubing from tree to tree, adding amendments to evaporator systems, drilling and tapping trees and gathering the sap – all a flurry of industry until the sugar maple runs and steams in the cupolas of the sugar houses. The sights, sounds, smells and tastes of early spring arrive in New Hampshire.

Whether the sugar maker is collecting sap through many miles of plastic tubing with the aid of a vacuum system to draw it along to a collection tank, or dripping steadily into a metal pail hung from the spile driven into the tree, the end result will be the same. Whether the sap is boiled in a large evaporator after being reduced through a Reverse-osmosis system or in a stainless steel pot over a gas burner, the end result will be the same. Each producer has his or her own preferences as to how sap is turned to syrup, and each has the same result; pure, delicious, award winning New Hampshire maple syrup.
Celebrating this wonder, in mid March, the maple producers of New Hampshire hold a statewide open house called Maple Weekend. Over 60 sugar houses open their doors to invite the public to share in the centuries-old craft of maple sugaring offering plenty of opportunities to tour maple orchards and sugar houses, learn how maple syrup is made, and taste free samples of maple products and fill up on pancake breakfasts.
Local producers share with visitors how their operations work and offer free samples of fresh syrup, as well as samples of maple candies and confections, coffee and doughnuts. Some locations have petting farms or horse-drawn rides.
